Hello, Dear Friends!
As the warm embrace of summer wraps around us, there's no better time to step outside, bask in the beauty of nature, and enjoy a delightful outdoor picnic. There's something magical about dining al fresco, surrounded by the sights and sounds of nature, that makes the simplest meal feel like a grand celebration.
Finding the Perfect Spot
When planning a picnic, the first step is finding the perfect spot. I love choosing a place that offers a blend of sun and shade, where you can feel the warmth of the sun but also retreat to the cool comfort of a shady tree. Whether it's a local park, a scenic riverside, or your own backyard, the key is to find a place that brings you peace and joy.
Savoring Nature's Beauty
As you spread out your blanket, take a moment to savor the beauty around you. Listen to the birds singing their melodies, feel the gentle breeze on your skin, and breathe in the fresh air. There's a special kind of tranquility that comes with being in nature, and it's the perfect antidote to the hustle and bustle of everyday life.
Delicious and Simple Picnic Delights
Now, let's talk about the food! One of my favorite picnic treats combines the sweetness of peas with the creamy goodness of ricotta. It's a simple yet delectable combination that never fails to delight my taste buds.
Here's how you can prepare this tasty treat:
Sweet Pea and Ricotta Crostini
Ingredients:
- Fresh peas (blanched and cooled)
- Ricotta cheese
- Fresh mint leaves (chopped)
- Lemon zest
- Sea salt and black pepper
- Slices of crusty bread (toasted)
Instructions:
- Prepare the Pea Mixture: In a bowl, mix the blanched peas with chopped mint leaves, a touch of lemon zest, and a sprinkle of sea salt and black pepper.
- Spread the Ricotta: Generously spread ricotta cheese on each slice of toasted bread.
- Add the Pea Mixture: Top the ricotta with the pea mixture, pressing down gently to help it adhere to the cheese.
- Garnish and Serve: For an extra touch of flavor, drizzle a little olive oil on top and garnish with additional mint leaves.
This simple yet elegant snack is the perfect accompaniment to any picnic. The sweet, green flavor of the peas paired with the creamy ricotta and the crunch of the toasted bread is pure perfection.
Creating Lasting Memories
Picnics are more than just a meal; they’re an opportunity to create lasting memories. Whether you’re with family, friends, or enjoying a peaceful moment alone, take this time to disconnect from technology and reconnect with the world around you. Bring along a good book, play some classic outdoor games, or simply lie back and watch the clouds drift by.
The Joy of Simple Pleasures
In the end, it's the simple pleasures that bring the most joy. A delicious meal, the beauty of nature, and the company of loved ones – these are the moments that fill our hearts and nourish our souls.
So, pack your picnic basket, grab your favorite blanket, and head outdoors to enjoy the wonderful experience of a summer picnic. Remember to savor every bite, every laugh, and every moment of peace.
With love and sunny wishes,

Sounds so summer refreshing! I’ll have to switch to mashed avocado with the olive oil, salt and pepper though. Dairy intolerance hampers my love of cheese. I miss cheese. :( No matter-avocado will be a tasty alternative! Tastes really good with peas too. Thank you for such a lovely article and recipe.
Such a lovely idea and the recipe looks delicious. I have a pea salad recipe that I’ve made for years and I think it would be yummy if I combine my recipe with yours. I can’t wait to try it. I love to experiment with food. Thanks for always being an inspiration and a ray of sunshine, Melissa! You are like a childhood friend to me, although we’ve never even met. Keep doing all the wonderful things you do!
